From the orchard to the glass: behind the scenes of Alvora production

Behind every bottle of Alvora is a clear philosophy: respect nature, care for the process and value the real flavor of the apple. In this article, we explain how it all begins in the orchards of Armamar and evolves into three unique styles of cider — Brut, Semi-Dry and Brut Sparkling — all made without additives, with time and intention.

Behind every bottle of Alvora there is much more than apples — there is time, care and a philosophy that respects nature.

It all starts in the orchards of Armamar, where apples ripen slowly on the mountain slopes. There, the soil and climate create a more aromatic and balanced fruit, perfect for transforming into something special.

The harvest is done manually, with a rigorous selection of the fruits. Each variety is then cold pressed to preserve maximum freshness and expression of the apple.

This is where the path divides — and the three Alvora styles are born:

🍏 Alvora Altitude

Complete fermentation for a dry, direct and elegant cider. No added sugars — just mountain apples, patience and respect for time.

🍎 Alvora Harmony

Long and balanced fermentation, with a minimal touch of residual sweetness. A slightly sparkling cider, designed for those who appreciate smoothness and freshness.

Solemn Dawn

Sparkling apple cider with fine, persistent bubbles. Made to toast special moments, with all the lightness and purity of altitude.


All ciders are made without concentrates, without artificial additives and with responsible production. A small-scale process, but with big intentions.

When we say that Alvora is “respect for the origin, care in the process and pleasure in the result”, it’s not just a phrase — it’s what we do, every day.
